Some people will complain about the bitter taste of matcha tea, and often times it is because the consumer has purchased cooking-grade matcha rather than ceremonial grade matcha, the latter of the two being the one that’s meant to be drank. Cooking grade matcha is taken from the second or third harvest of the leaves, whereas the ceremonial grade matcha comes from the first harvest and includes only the highest quality green tea leaves.
